It is a chance to live among the olive trees, that noble and delicate tree that allows us to produce the best vegetable fat in the world. And we couldn't spoil that chance.
The question of quality was simple: we had to make every effort to produce the best extra virgin olive oil possible.
For this, we combine traditional methods (treating olive trees without pesticides or traditional harvesting without large-scale agricultural machinery) with advanced technological methods (oil extraction without water).
Organic agriculture is not enough to produce a quality product. You can have an organic product, but of low quality.
Our olive oil is a quality organic product (acidity rate less than 0.2).
